Philotimo Organic Forest and Thyme Honey, collected by bees early in summertime, is a unique honey not found anywhere else in the world due to its enzyme "diastasi" that makes it one of the best honey varieties in the world. Forest and thyme's texture naturally crystallises, however it can be reset to a liquid form if the vase of honey is set in a pot of hot water (up to 45 deg C or 110 deg F).
